We've just done our first sample roast of this Washed Ethiopian and can't wait to see how it evolves over the next couple of days/weeks. Rather than continue to wait for our coffee to reach it's peak form, for the sake of transparency and coffee-nerdiness we'd like to loop you all in from the ground floor - we hope you're just as excited as we are!
We first tasted this coffee 4 days after it's sample roast and enjoyed Sweet Florals, a Honeydew/Plum Fruit Note and a White Sugar/Whipped cream sweetness that helps tie the fruit to the floral.
As the coffee continues to age and as our roasts of it refine, you can expect these notes to evolve as well!
